While we were enjoying a beautiful summer in the nature, we came up with an easy to make recipe for a flavoursome pie! When we shared this pie with our family and friends, we received lots of positive comments, so we decided to post the recipe here, and this time we even made a video showing how we make it! We hope you will enjoy it too :).
- 200 g oats
- 200 g dates (soaked)
- 250 g cashew nuts (soaked)
- 1 cup strong coffee
- 2-4 table spoons of syrup of your choice (maple, agave, rice..)
We begin with making a cup of strong coffee. While the coffee is brewing, we start on the crust for the pie. Firstly we blend the oats until it becomes a fine ‘flour’, then we add soaked dates and blend the ‘flour’ and dates together until it forms a sticky dough. We like to form a ‘ball’ out of the dough and then press and even it out on a pie dish or just a big plate. Once the crust is ready, we place it in the freezer for a couple of minutes.
In the mean time we make the filling. We put soaked cashew nuts into a bowl together with a cup of coffee and a couple of spoons of syrup and bend everything until it forms a fine, creamy filling. Then we take out the crust from the freezer, pour the filling over it and spread it out with a spoon. Sometimes we find it nice to dust a bit of cacao powder on top of the pie. Finally we put the dish back into the freezer for approximately one hour before serving (you can keep it there for longer, but then you need to take it out about half an hour before eating, otherwise it will be too frozen).
